After minimizing the Ribbon if you double-click any tab on the Ribbon the full Ribbon appears and then minimizes again as soon as you click anywhere outside the Ribbon.

Double-clicking a tab on the Ribbon will expand it, but it will not automatically minimize again when you click outside. You need to double-click the tab again to minimize it.
