Farmers practice terracing to control erosion and protect the water supply-both the water supply to their crops and the general water supply. Channels under the terraces can hold rainwater (to increase hydration) or help move water away from the soil more quickly (to prevent over-hydration and plant rot), depending on how they are built. Terracing also causes the soil to hold onto impurities so that they can't contaminate waterways, which would threaten the quality of the general water supply. By protecting the saturation level of the soil and creating minor physical barriers with the soil itself (the ridges of the terraces), the strategy also helps prevent soil erosion.
