Pancreatic amylase breaks down starch into smaller carbohydrate molecules, primarily disaccharides and trisaccharides of glucose, such as maltose and maltotriose.  The activity of salivary and pancreatic a-amylase is the hydrolysis of starch at a(1,4)-glycosidic linkages. Amylase functions at random locations along the starch polymer hydrolyzing long-chain carbohydrates.
